Oh, my! Chocolate Pie

A word from the cook
No one will know this pie is made with avocados or that it's healthy. It's our little secret.

2 cups pecans
5 chopped pitted dates
2 tbsp cocoa powder
1 tbsp maple syrup
2 tsp cinnamon
2 tsp nutmeg
1 tsp vanilla
a pinch of salt

2 ripe avocados
1/8 cup almond milk
1 tsp lemon juice
1 tsp vanilla
1 tbsp cocoa powder
12 oz chocolate (I prefer dark)
fresh fruit for topping, optional


For the crust:
1. Soak 2 cups of pecans for 2 hours.
2. In a food processor, chop 1 cup of the soaked pecans into a fine meal and then transfer into a bowl.
3. Add the other cup of pecans to the food processor with dates, cocoa powder, maple syrup, cinnamon, nutmeg, vanilla and salt. Pulse until combined but still a little chunky. Add to the bowl of finely chopped pecans and mix together with a spoon.
3. Pour pecan mixture into a pie dish and press down to form the crust.

For the filling:
1. In a food processor, blend avocados, almond milk, lemon juice, vanilla and cocoa powder until smooth.
2. Using a double boiler, melt the chocolate. Let cool slightly and add to food processor with avocado mixture. Blend until mixture becomes silky smooth.
3. Pour into crust and chill in fridge for about an hour before serving.
4. Top with fresh fruit if you like.
